Where to eat in Dallas

1. Technique (Le Cordon Bleu) : What to order --- Watermelon, mache, and arugula salad. Under the greens, there were hidden kalamata olives, red onions, and mint. On the top, goat cheese and red wine vinaigrette dressing; Caprese salad: fried mozzarella, heirloom tomatoes, roasted red peppers, basil, olive oil, and balsamic vinegar reduction;  Beef Short Rib served with potato puree, saute of seasonal vegetables, three onion relish, and gravy; Saute halibut served with corn and fava bean succotash, tomatoes, and peas; Classic Creamy Cheesecake with strawberry-rhubarb compote, fresh whipped cream, and cocoa sauce. I liked the rhubarb :)

2. Bolsa - Market, Cafe, Wine Bar : What to order --- Twig & Branch Flatbread (wild arugula, caprino royale chevre & oven roasted grapes). The roasted grapes had a intensified sweet flavor and soft texture; Egg Sandwich (piquillo peppers, arugula & bacon). On the side, green salad, topped with pecans and cranberries. And beer!!!
